Make the Chimichurri Marinade
In a medium bowl, combine chopped parsley, cilantro, minced garlic, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper. Mix well until all the ingredients are fully incorporated.

Marinate the Beef
Place the beef cubes in a large resealable plastic bag or a shallow dish. Pour half of the chimichurri marinade over the beef, ensuring all pieces are well coated. Reserve the remaining marinade for serving. Seal the bag or cover the dish and refrigerate for at least 1 hour, or overnight for best flavor.

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Preheat the grill to medium-high heat.

Thread the marinated beef cubes onto the skewers, leaving a little space between each piece for even cooking.
