Prepare the Puff Pastry
Preheat your oven to 400°F (200°C). Roll out the puff pastry sheets on a lightly floured surface and cut each sheet into squares, approximately 4x4 inches in size.

Assemble the Squares
Place a small piece of Brie cheese in the center of each puff pastry square. Top with a tablespoon of candied pecans and drizzle a little honey over them. Sprinkle with fresh thyme leaves, salt, and black pepper.

Seal the Pastry
Fold the corners of the pastry squares over the filling to create a parcel. Pinch the edges to seal, and place the squares seam-side down on a baking sheet lined with parchment paper.

Beat the egg in a small bowl and brush the egg wash over the tops of the pastry squares for a golden finish.

Bake in the preheated oven for 15-20 minutes or until the pastry is puffed and golden brown.
