    Prepare the Crust

    Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and salt. Press the mixture firmly into the bottom of a springform pan to form the crust.

    Make the Cheesecake Filling

    In a large mixing bowl, beat the cream cheese until smooth. Add sugar and vanilla extract, mixing until well combined. Add sour cream and mix until fully incorporated. Add eggs one at a time, mixing gently after each addition.

    Create the Berry Swirl

    In a separate bowl, mash your choice of mixed berries (strawberries, blueberries, raspberries) and swirl them into the cheesecake filling gently for a marbled effect.

    Bake the Cheesecake

    Pour the cheesecake filling over the prepared crust and smooth the top. Bake in the preheated oven for 50-60 minutes or until the center is set and only slightly jiggly.

    Cool and Refrigerate

    Turn off the oven and crack the oven door, allowing the cheesecake to cool in the oven for 1 hour. Afterward, refrigerate for at least 4 hours or overnight.
