    Prepare the Mussels

    Rinse the mussels under cold water, scrubbing the shells to remove any debris. Discard any mussels that are open and do not close when tapped.

    Cook the Pancetta

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced pancetta and cook until crispy, about 5 minutes.

    Sauté the Aromatics

    Add the diced onion and minced garlic to the pot with the pancetta. Sauté for an additional 3-4 minutes, until the onion is translucent.

    Add Wine and Mussels

    Pour in the white wine and bring to a simmer. Add the cleaned mussels to the pot, cover, and steam for about 5-7 minutes, or until the mussels open.

    Finish with Spinach and Tomato

    Once the mussels have opened, stir in the fresh spinach and diced tomato. Cook for another 2-3 minutes until the spinach is wilted. Season with salt and black pepper to taste.

    Serve

    Ladle the mussels and broth into bowls and serve with slices of toasted sourdough bread for dipping.
