Prepare the Glaze
In a small saucepan, combine sake, plum sauce, brown sugar, rice vinegar, cornstarch, and water. Stir well and bring to a simmer over medium heat. Cook until thickened, about 5-7 minutes. Remove from heat and set aside.
Cook the Mahi Mahi
Season the Mahi Mahi fillets with salt and pepper. In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the fillets and cook for about 4-5 minutes on each side until golden and cooked through. Remove from skillet and let rest.
Make the Fried Rice
In the same skillet, add the remaining tablespoon of oil. Sauté the minced garlic until fragrant, about 30 seconds. Add the frozen peas and carrots, and cook until heated through.
Combine the Ingredients
Push the vegetables to the side of the skillet and add the beaten eggs. Scramble until cooked, then mix with the vegetables. Add the cooked jasmine rice, soy sauce, and sesame oil. Stir well to combine and heat through.
Serve
Plate the fried rice and top with the Mahi Mahi fillets. Drizzle the sake plum sweet and sour glaze over the fish and rice. Garnish with chopped green onions and serve immediately.
