Marinate the Short Ribs

In a bowl, mix the honey, Dijon mustard, minced garlic, thyme, salt, and black pepper. Coat the beef short ribs with the marinade and let them sit for at least 2 hours, preferably overnight in the refrigerator.

Prepare the Grill

Preheat your grill to medium-high heat. Brush the grates with olive oil to prevent sticking.

Grill the Ribs

Remove the ribs from the marinade and grill them for about 4-5 minutes on each side, until they have a nice char. Transfer them to a baking dish.

Make the Demi Glace

In a skillet, melt butter over medium heat. Add the chanterelle mushrooms and sauté until golden brown. Pour in the red wine and beef stock, and simmer until the sauce reduces by half, about 15 minutes.

Combine and Serve

Pour the demi-glace over the grilled short ribs and serve immediately.
