Prepare Filling
In a bowl, combine the lobster meat, minced shallot, garlic, green onions, soy sauce, and sesame oil. Mix well until all ingredients are incorporated.

Assemble Potstickers
Take a gyoza wrapper and place about 1 tablespoon of the lobster filling in the center. Wet the edges of the wrapper with water, fold it over to create a half-moon shape, and pinch the edges to seal. Repeat with the remaining wrappers and filling.

Cook Potstickers
Heat vegetable oil in a large skillet over medium-high heat. Once hot, add the potstickers and cook for 2-3 minutes or until the bottoms are golden brown. Add 1/4 cup of water to the skillet, cover, and steam for about 5 minutes or until the potstickers are cooked through.

Prepare Sauce
In a small saucepan, melt the unsalted butter over medium heat. Stir in the miso paste, togarashi spice, water, and lemon juice. Cook until the sauce is smooth and slightly thickened.

Serve
Serve the potstickers hot with the togarashi miso butter sauce drizzled on top.
