    Prepare the Base

    In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and red bell pepper, sautéing until the onions are translucent.

    Add Tomatoes and Liquids

    Stir in the crushed tomatoes, fish stock (or clam juice), and white wine. Bring the mixture to a simmer.

    Infuse with Saffron

    Add the saffron threads to the broth and let it simmer for about 5 minutes to let the flavors meld.

    Add the Seafood

    Carefully add the calamari, mussels, scallops, and shrimp to the pot. Cover and cook for 5-7 minutes, or until the mussels open and the shrimp turn pink.

    Season and Serve

    Season with salt and black pepper to taste. Stir in the chopped parsley before serving. Enjoy your Cioppino hot, garnished with additional parsley if desired.
