Preparation and Grilling

    Prepare the Octopus

    In a large pot, bring water to a boil and season with a generous amount of salt. Add the octopus and cook for about 45 minutes to 1 hour until tender. Remove from the pot and let it cool.

    Prepare the Chorizo

    While the octopus is cooling, slice the chorizo sausage into thin rounds. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chorizo and cook until crispy, about 5-7 minutes. Remove from heat and set aside.

    Marinate the Octopus

    Once the octopus has cooled, cut it into manageable pieces. In a bowl, combine the remaining olive oil, smoked paprika, minced garlic, salt, and black pepper. Add the octopus pieces and mix well. Let it marinate for at least 30 minutes.

    Grill the Octopus

    Preheat the grill to medium-high heat. Grill the marinated octopus for about 3-4 minutes on each side until charred and heated through.

    Serve

    Remove from the grill and serve the grilled octopus on a platter, topped with the crispy chorizo, chopped fresh parsley, and lemon wedges on the side.
