    Prepare the Steaks

    Pat the filet mignon steaks dry with paper towels. Season both sides generously with salt and black pepper.

    Sear the Steaks

    In a large skillet, heat olive oil over medium-high heat. Once hot, add the steaks and sear for 4-5 minutes on each side for medium-rare, or until desired doneness. Remove the steaks from the skillet and let them rest on a plate.

    Make the Red Wine Reduction

    In the same skillet, add minced shallots and cook for 1-2 minutes until soft. Pour in the red wine and scrape up any browned bits from the bottom of the skillet. Bring to a boil and reduce by half.

    Add Beef Stock

    Add the beef stock to the skillet and continue to cook until the sauce thickens slightly, about 5-7 minutes. Stir in the fresh thyme.

    Finish the Sauce

    Remove the skillet from heat and whisk in the butter until melted and the sauce is glossy. Season with salt and pepper to taste.

    Serve

    Slice the filet mignon if desired and plate. Drizzle the red wine reduction over the steaks and serve immediately.
