Mousse Ingredients

Method

Preparation Steps

  1. 1

    Melt the Chocolate

In a heatproof bowl, melt the dark chocolate over a pot of simmering water, stirring until smooth. Remove from heat and let it cool slightly.

  2. 2

    Whip the Cream

In a mixing bowl, whip the heavy cream until it forms soft peaks. Set aside.

  3. 3

    Separate the Eggs

Separate the egg yolks and whites into two different bowls.

  4. 4

    Mix Egg Yolks and Sugar

In the bowl with the egg yolks, add the sugar and vanilla extract. Whisk until the mixture is pale and creamy.

  5. 5

    Combine Chocolate and Egg Mixture

Fold the melted chocolate into the egg yolk mixture until well combined.

  6. 6

    Beat Egg Whites

In the bowl with the egg whites, add a pinch of salt and beat until stiff peaks form.

  7. 7

    Fold in Egg Whites

Gently fold the beaten egg whites into the chocolate mixture, being careful not to deflate the mixture.

  8. 8

    Add Whipped Cream

Finally, fold in the whipped cream until the mixture is smooth and well combined.

  9. 9

    Chill

Spoon the mousse into serving dishes and refrigerate for at least 2 hours before serving.
