Seafood and Rice

Method

Cooking Instructions

  1. 1

    Prepare the Ingredients

Chop the onion, garlic, bell pepper, and tomatoes. Set aside.

  2. 2

    Sauté the Vegetables

In a large paella pan or skillet, heat olive oil over medium heat. Add the chopped onion, garlic, and bell pepper, and sauté until soft.

  3. 3

    Add Tomatoes and Spices

Stir in the chopped tomatoes, paprika, saffron, salt, and black pepper. Cook for a few minutes until the tomatoes are softened.

  4. 4

    Add Rice

Add the Basmati rice to the pan and stir to coat it with the mixture. Toast the rice for about 2 minutes.

  5. 5

    Add Broth

Pour in the chicken broth, bring to a boil, then reduce the heat to a gentle simmer. Cook for about 10 minutes.

  6. 6

    Add Seafood

Arrange the lobster, clams, mussels, shrimp, and scallops on top of the rice. Cover and cook for an additional 10-15 minutes, or until the seafood is cooked through and the rice has absorbed the liquid.

  7. 7

    Garnish and Serve

Once done, remove from heat and let it rest for 5 minutes. Garnish with chopped parsley and lemon wedges before serving.
