1. Prepare the Seafood

In a large pot, bring water to a boil. Add the clams and mussels, cover, and cook until they open (about 5-7 minutes). Remove from heat and set aside. Strain the liquid and reserve.

2. Cook the Shrimp and Scallops

In a separate pan, heat some olive oil over medium heat. Add the shrimp and scallops, cooking until the shrimp turn pink and the scallops are opaque (about 3-4 minutes). Remove from heat.

3. Make the Sauce

In the same pan, add more olive oil and sauté minced garlic until fragrant. Add chopped fresh coriander, salt, and pepper to taste. Stir in the reserved seafood liquid and let simmer for 5 minutes.

4. Combine Ingredients

Add the cooked seafood (shrimp, clams, mussels, and scallops) and cubed Portuguese bread to the sauce. Stir well and let it sit for a few minutes until the bread absorbs the flavors.

5. Poach the Eggs

In a separate pot, bring water to a gentle simmer. Crack an egg into a small bowl and gently slide it into the water. Poach for 3-4 minutes until the whites are set but the yolk is still runny. Remove with a slotted spoon.

6. Serve

Divide the seafood mixture into bowls. Top each serving with a poached egg and garnish with additional fresh coriander and a drizzle of olive oil.
