Seafood and Sauce

Method

Preparation

  1. 1

    Cook the Rice

In a saucepan, bring 4 cups of water to a boil. Add 2 cups of rice, reduce heat to low, cover, and simmer for 18-20 minutes or until rice is cooked. Fluff with a fork and set aside.

  2. 2

    Prepare the Seafood Sauce

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, sauté until the onion is translucent.

  3. 3

    Add the Tomatoes and Seasonings

Stir in the crushed tomatoes, cognac, salt, black pepper, paprika, and bay leaves. Bring the mixture to a simmer and cook for about 10 minutes.

  4. 4

    Add the Seafood

Add the lobster, clams, mussels, shrimp, and scallops to the sauce. Cover and cook for an additional 10-15 minutes, or until the seafood is cooked through and the clams and mussels have opened.

  5. 5

    Serve

Remove bay leaves and serve the mariscada over the cooked rice. Enjoy your delicious seafood dish!
