Prepare the Seafood Sauce
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, sauté until the onion is translucent.

Add the Tomatoes and Seasonings
Stir in the crushed tomatoes, cognac, salt, black pepper, paprika, and bay leaves. Bring the mixture to a simmer and cook for about 10 minutes.

Add the Seafood
Add the lobster, clams, mussels, shrimp, and scallops to the sauce. Cover and cook for an additional 10-15 minutes, or until the seafood is cooked through and the clams and mussels have opened.

Serve
Remove bay leaves and serve the mariscada over the cooked rice. Enjoy your delicious seafood dish!
