    Prepare the Ingredients

    Thinly slice the onions and garlic. Cut the Portuguese chorizo into small pieces.

    Sear the Steak

    In a large skillet, heat olive oil over medium-high heat. Season the beef steaks with salt and black pepper. Sear the steaks for 3-4 minutes on each side until browned. Remove and set aside.

    Cook the Aromatics

    In the same skillet, add onions and garlic. Cook until translucent, about 5 minutes.

    Add Chorizo and Tomato Paste

    Add the chorizo and tomato paste to the skillet. Stir and cook for another 2-3 minutes.

    Deglaze and Braise

    Pour in the white wine and scrape the bottom of the skillet. Add beef broth and bay leaves. Bring to a simmer.

    Combine and Cook

    Return the seared steaks to the skillet. Cover and let it simmer on low heat for 30 minutes, until the steaks are tender.

    Fry the Eggs

    In a separate pan, fry the eggs sunny-side up until the whites are set but the yolks remain runny.

    Assemble the Dish

    Serve the steak topped with chorizo sauce, a slice of ham, and a fried egg on top.
