    Prepare the Cockles

    Rinse the New Zealand cockles under cold running water to remove any sand or grit. Set aside.

    Cook the Garlic

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.

    Add the Cockles

    Add the rinsed cockles to the skillet, followed by the white wine, lemon juice, salt, and black pepper. Stir gently to combine.

    Simmer

    Cover the skillet and let the cockles cook for about 5-7 minutes, or until they open up. Discard any cockles that do not open.

    Finish with Parsley

    Remove the skillet from heat and stir in the chopped parsley. Adjust seasoning with more salt, pepper, or lemon juice if needed.
