In a skillet, sauté the asparagus, mushrooms, and bell peppers in a little olive oil until tender. Add the caramelized onions and mix well. Set aside.

In a large bowl, combine the cubed stale bread, sautéed vegetables, diced ham, and shredded swiss cheese. Pour the egg mixture over the bread mixture, ensuring everything is well coated. Let it sit for 10 minutes to absorb.

In a saucepan, melt the butter over low heat. In a separate bowl, whisk egg yolks, lemon juice, and a pinch of salt. Slowly drizzle in the melted butter while whisking continuously until the sauce thickens. Stir in crushed black peppercorns and heavy cream.
