Preheat the oven to 450°F (232°C). In a bowl, mix flour, baking powder, garlic powder, and salt. Cut in butter until crumbly. Stir in buttermilk until just combined. Roll out and cut into biscuits. Bake for 12-15 minutes until golden.

Place slices of ham in muffin tin. Crack an egg into each slice. Bake at 350°F (175°C) for 12-15 minutes until the egg is set.

Make the Pimento Cheese

In a bowl, combine cheddar cheese, cream cheese, pimentos, mayonnaise, garlic powder, and salt. Mix until smooth. Set aside.

Prepare the Cheddar Chive Grits

In a saucepan, bring water and salt to a boil. Stir in grits and reduce heat. Cook until thickened, about 20-25 minutes. Stir in cheddar cheese and chives until melted.

In a skillet, cook the sausage until browned. Sprinkle flour and stir for 1 minute. Gradually add milk, whisking until smooth. Add thyme, salt, and pepper. Simmer until thickened.

On a plate, place a biscuit, top with baked egg in ham, a dollop of pimento cheese, a serving of cheddar chive grits, and smother with sausage gravy. Garnish with extra chives if desired.
