Make the Biscuits
Preheat the oven to 450°F (230°C). In a large bowl, mix together the flour, baking powder, baking soda, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the buttermilk until just combined. Turn the dough onto a floured surface and knead gently. Roll out to 1-inch thickness and cut into circles. Place on a baking sheet and bake for 12-15 minutes until golden brown.

Prepare the Gravy
In a skillet over medium heat, cook the sausage until browned. If using vegetarian sausage, cook according to package instructions. Sprinkle flour over cooked sausage and stir for 1-2 minutes. Gradually add milk while stirring, cooking until thickened. Season with black pepper and salt to taste.

Serve
Split the warm biscuits in half, top with sausage gravy, and serve with a side of bacon, pork sausage, or veggie sausage.
