Instructions for Peanut Butter Chocolate Pie
- 1
Prepare the Pie Crust
In a mixing bowl, combine chocolate cookie crumbs and melted butter, mixing until well combined. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish. Bake in a preheated oven at 350°F (175°C) for 10 minutes. Remove from the oven and let cool completely.
- 2
Make the Ganache
In a small saucepan, heat the heavy cream over medium heat until just simmering. Remove from heat and add dark chocolate, stirring until smooth and fully melted. Allow to cool slightly.
- 3
Assemble the Pie
Pour the ganache into the cooled chocolate cookie crust, spreading evenly. Place in the refrigerator to set for about 30 minutes.
- 4
Prepare the Peanut Butter Mousse
In a medium bowl, whisk together the creamy peanut butter, ricotta cheese, powdered sugar, vanilla extract, and salt until smooth and creamy.
- 5
Fill the Pie
Once the ganache has set, spread the peanut butter mousse evenly over the ganache layer. Refrigerate the pie for at least 2 hours or until set.
- 6
Garnish and Serve
Before serving, sprinkle with chopped peanuts if desired. Slice and enjoy your delicious Peanut Butter Chocolate Pie!
