    Braise the Beef

    In a large pot or Dutch oven, heat the olive oil over medium heat. Season the brisket with salt and black pepper. Sear the brisket on all sides until browned. Add salsa ranchera, cover, and simmer on low heat for about 2-3 hours until tender.

    In a separate pot, heat the black beans over medium heat. Season with salt and pepper. Let simmer for about 10 minutes.

    Fry the Tortillas

    In a skillet, fry the corn tortillas in a little olive oil over medium heat until crispy. Set aside.

    Cook the Eggs

    In the same skillet, crack the eggs and cook them to over-medium doneness, about 3-4 minutes.

    Assemble the Dish

    On each crispy tortilla, layer with black beans, slices of braised brisket, and top with an over-medium egg. Sprinkle with melted pepperjack cheese and drizzle jalapeño crema on top.
