Burger Preparation

    Prepare the Beef Patties

    Divide the ground beef into 3 equal portions (about 6 oz each) and shape them into patties. Season both sides with salt and black pepper.

    Cook the Onions

    Slice the onion into rings and sauté in a skillet over medium heat with a little oil until caramelized, about 10-15 minutes. Set aside.

    Griddle the Patties

    Heat a griddle or a skillet over medium-high heat. Add a little oil and cook the beef patties for about 4-5 minutes on each side for medium doneness. In the last minute of cooking, place a slice of smoked gouda on each patty to melt.

    Prepare the Aioli

    In a small bowl, mix the garlic confit with mayonnaise. Adjust seasoning if necessary.

    Assemble the Burgers

    Toast the brioche buns lightly. Spread a layer of garlic confit aioli on the bottom bun, add the lettuce, then the melted beef patty, caramelized onions, and a spoonful of tomato-bacon jam. Top with the other half of the bun.

    Serve the griddle top burgers with a side of French fries.
