    Prepare the Oysters

    Rinse the fresh oysters under cold water and drain well. Pat them dry with a paper towel.

    Make the Batter

    In a shallow bowl, combine the cornmeal, flour, salt, and black pepper. In another bowl, whisk together the eggs and milk until well combined.

    Coat the Oysters

    Dip each oyster into the egg mixture, allowing any excess to drip off, then dredge it in the cornmeal mixture, ensuring it is well-coated.

    Heat the Oil

    In a large skillet or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Oysters

    Carefully place the coated oysters into the hot oil in batches, being careful not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown and crispy.

    Remove the fried oysters from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with tartar sauce on the side.
