Prepare the Breading
In a shallow dish, mix together the cornmeal, flour, Cajun seasoning, salt, and black pepper.

Coat the Catfish
Dip each catfish fillet first in the wet mixture, then dredge it in the cornmeal mixture, ensuring it's well coated.

Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Catfish
Carefully place the coated catfish fillets into the hot oil, frying for about 4-5 minutes on each side, or until golden brown and cooked through.

Drain and Serve
Remove the fried catfish from the skillet and place on a paper towel-lined plate to drain excess oil. Serve hot with remoulade sauce.
