Chicken Preparation

Marinate Chicken
In a bowl, combine buttermilk, salt, pepper, paprika, and garlic powder. Add chicken breasts and let marinate for at least 1 hour or overnight in the refrigerator.

Prepare Breading
In another bowl, mix all-purpose flour and cornstarch together.

Fry Chicken
Heat vegetable oil in a deep pan over medium heat. Remove chicken from buttermilk mixture, dredge in the flour mixture, and carefully place in the hot oil. Fry for 6-8 minutes per side or until golden brown and cooked through. Drain on paper towels.

In a large bowl, whisk together sweet potato puree, milk, eggs, and vanilla extract.

In another bowl, combine all-purpose flour, baking powder, sugar, and salt.

Preheat a waffle iron. Gradually add dry ingredients to the wet mixture and stir until just combined. Pour batter into the preheated waffle iron and cook according to the manufacturer's instructions until golden and crisp.
