Chicken Preparation

Marinate Chicken
In a bowl, soak the chicken breast in buttermilk for at least 1 hour or overnight in the refrigerator.

In a separate bowl, mix flour, cornstarch, baking powder, salt, black pepper, and garlic powder.

Heat oil in a deep skillet over medium-high heat. Remove chicken from buttermilk, coat in the flour mixture, and fry until golden brown and cooked through, about 7-10 minutes. Drain on paper towels.

In a bowl, combine sweet potato puree, flour, baking powder, sugar, milk, egg, vanilla extract, and melted butter. Mix until smooth.

Preheat the waffle iron and pour the batter into the iron. Cook according to waffle iron instructions until golden brown.
