Chicken & Biscuits

Method

Cooking Instructions

  1. 1

    Prepare the Chicken

In a bowl, marinate the chicken breasts in buttermilk for at least 30 minutes. This will help tenderize the chicken and add flavor.

  2. 2

    Make the Biscuit Dough

In a large bowl, mix together the flour, baking powder, salt, and paprika. Cut in cold butter until the mixture resembles coarse crumbs. Add buttermilk and stir until just combined. Do not overmix.

  3. 3

    Fry the Chicken

Heat oil in a large skillet over medium-high heat. Remove chicken from buttermilk, letting excess drip off. Dredge in a mixture of flour, cornstarch, salt, black pepper, and paprika. Fry the chicken until golden brown and cooked through, about 6-8 minutes per side. Drain on paper towels.

  4. 4

    Make the Sausage Gravy

In the same skillet, add sausage and cook until browned. Sprinkle flour over the sausage and cook for an additional minute. Gradually add milk, stirring constantly until thickened. Season with salt and pepper to taste.

  5. 5

    Bake the Biscuits

Preheat oven to 425°F (220°C). Drop spoonfuls of the biscuit mixture onto a baking sheet. Bake for 12-15 minutes or until golden brown.

  6. 6

    Prepare Breakfast Potatoes

Dice potatoes and toss them with olive oil, garlic powder, onion powder, salt, and pepper. Roast in the oven at 400°F (200°C) for 25-30 minutes until crispy.

  7. 7

    Serving

Serve the fried chicken topped with sausage gravy, alongside the freshly baked biscuits and breakfast potatoes. Garnish with fresh parsley.
