Prepare Black-Eyed Peas
Soak the black-eyed peas overnight in water. Drain and rinse well.

Make Fritter Mixture
In a large bowl, mash the soaked black-eyed peas with a fork or a potato masher. Stir in the chopped onion, minced garlic, parsley, cumin, coriander, salt, black pepper, flour, baking powder, and water until well combined.

Form Fritters
Shape the mixture into small patties or fritters, about 2 inches in diameter.

Heat Oil
In a large frying pan or deep fryer, heat the oil over medium-high heat until hot.

Fry Fritters
Carefully place the fritters in the hot oil, frying in batches to avoid overcrowding. Fry each side for about 3-4 minutes or until golden brown.

Remove the fritters from the oil and drain on paper towels. Serve warm with pepper jelly.
