Preparation
- 1
Prepare the Crust
Preheat the oven to 180°C (350°F). In a food processor, blend the shortbread cookies and chopped pecans until finely crushed. Add the melted butter and mix until combined. Press the mixture into the bottom and up the sides of a 9-inch pie pan. Bake for 10-12 minutes or until golden. Let it cool completely.
- 2
Make the Caramel Filling
In a saucepan, combine sweetened condensed milk and unsalted butter. Cook over medium heat, stirring constantly, until the mixture thickens and turns a caramel color, about 10-15 minutes. Pour the caramel into the cooled crust and spread evenly.
- 3
Layer with Bananas
Slice the bananas and layer them evenly over the caramel filling.
- 4
Whip the Cream
In a mixing bowl, whip the heavy cream with powdered sugar until soft peaks form. Spread the whipped cream over the bananas.
- 5
Chill and Serve
Refrigerate the pie for at least 2 hours before serving. Slice and enjoy!
