Make the Dough
In a large bowl, combine the flour and a pinch of salt. Make a well in the center and crack in the eggs. Gradually mix the flour into the eggs until a dough forms. Knead the dough on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Prepare the Filling
In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add ground beef and pork, season with salt, black pepper, and nutmeg. Cook until browned and cooked through. Remove from heat and let cool. Once cooled, mix in grated Parmesan cheese.

Shape the Tortellini
Roll out the dough on a floured surface until thin. Cut into squares (about 2 inches). Place a small spoonful of meat filling in the center of each square. Fold the square into a triangle and press the edges to seal. Then, bring the two corners of the triangle together to form a ring, pressing to seal.

Cook the Tortellini
Bring a large pot of salted water to a boil. Add the tortellini in batches and cook for 3-4 minutes or until they float to the top and are cooked through. Remove with a slotted spoon and drain.
