Making the Dough
In a large bowl, mix the flour and salt together. Create a well in the center, add the eggs and olive oil, and gradually mix the flour into the eggs until a dough forms. Knead the dough for about 5-7 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

Preparing the Filling
In a mixing bowl, combine the ricotta, Parmesan, mozzarella, egg yolk, nutmeg, salt, and black pepper. Mix until well blended and smooth.

Rolling Out the Dough
After the dough has rested, divide it into four pieces. Roll out each piece into thin sheets using a pasta machine or a rolling pin, dusting with flour as needed to prevent sticking.

Assembling the Ravioli
Place small spoonfuls of the cheese filling on one sheet of dough, leaving space between each. Moisten the edges of the dough with water, then place another sheet of dough on top. Press down around the filling to seal and cut out individual ravioli with a knife or cutter.
