Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick.

Dry the Potatoes
After soaking, drain the potatoes and spread them on a clean kitchen towel. Pat them dry thoroughly to remove moisture.

Heat the Oil
In a large, deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Carefully add the dried potato strips to the hot oil in batches, being careful not to overcrowd the pot. Fry for about 4-5 minutes or until golden brown.

Drain and Season
Remove the fries using a slotted spoon and place them on paper towels to drain excess oil. While still hot, season with salt, pepper, and garlic powder to taste.
