Preparing the Fish

Make the Batter
In a large bowl, mix the flour, cornstarch, baking powder, and salt. Gradually whisk in the cold sparkling water until smooth.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter the Fish
Dip each fish fillet into the batter, allowing excess to drip off.

Fry the Fish
Carefully place the battered fish in the hot oil and fry for 4-5 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.

Cut the Potatoes
Peel and cut the potatoes into thick strips.

Soak the Potatoes
Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

Fry the Potatoes
Heat the vegetable oil in a separate deep frying pan. Fry the soaked potato strips in batches for about 5-7 minutes or until golden and crispy. Remove and drain on paper towels, then season with salt.
