    Prepare the Pork Belly

    Preheat your oven to 450°F (232°C). Score the skin of the pork belly in a crosshatch pattern, making sure not to cut into the meat. Rub the pork belly with salt and black pepper, ensuring that the seasoning gets into the scores.

    Add Olive Oil and Thyme

    Rub olive oil and thyme all over the pork belly to enhance the flavor.

    Roasting

    Place the pork belly skin-side up on a roasting rack in a roasting pan. Roast in the oven for 30 minutes at 450°F (232°C) to get the skin crispy.

    Lower Temperature

    After 30 minutes, reduce the oven temperature to 325°F (163°C) and continue to roast for an additional 1.5 to 2 hours, or until the meat is tender and the skin is crispy.

    Resting

    Remove the pork belly from the oven and let it rest for 15 minutes before slicing.

    Slice the crispy pork belly and serve with apple sauce on the side.
