Method

Crust Preparation

1

Make the Pie Crust

In a large bowl, combine all-purpose flour and salt. Cut in butter until the mixture resembles coarse crumbs. Gradually add cold water, one tablespoon at a time, mixing until the dough comes together. Divide the dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Filling Preparation

2

Prepare the Filling

In a large skillet over medium heat, cook chopped onion and minced garlic until soft. Add the diced eye round steak and ground pork, cooking until browned. Stir in the beef broth, thyme, allspice, salt, and pepper. Simmer for 15-20 minutes until the meat is cooked through and the mixture thickens slightly. Allow to cool.

Assembling and Baking

3

Assemble the Tourtière

Preheat the oven to 375°F (190°C). Roll out one disk of dough on a floured surface to fit a pie pan. Place the dough in the pan, fill with the meat mixture, and then roll out the second disk to cover the top. Seal and crimp the edges. Cut slits in the top for steam to escape. Brush the top with beaten egg.

4

Bake

Bake in the preheated oven for 45-50 minutes or until the crust is golden brown. Let cool for 10 minutes before slicing and serving.
