Prepare the Crust

In a large bowl, mix together flour, sugar, and salt. Cut in the chilled butter until the mixture resembles coarse crumbs. Gradually add ice water, mixing until the dough comes together. Shape into a disk, wrap in plastic, and refrigerate for at least 30 minutes.

Roll and Bake the Crust

Preheat the oven to 375°F (190°C). Roll out chilled dough on a floured surface to fit a 9-inch pie pan. Place the dough into the pan, trimming the edges. Poke holes in the bottom with a fork. Bake for 15-20 minutes or until lightly golden. Let cool.

Prepare the Filling

In a mixing bowl, whisk together sugar, buttermilk, eggs, lemon juice, lemon zest, vanilla extract, and salt until smooth and well combined.

Bake the Pie

Pour the filling into the cooled pie crust. Bake at 350°F (175°C) for 40-45 minutes, or until the filling is set and the top is slightly golden. Let cool completely before serving.
