Prepare the Filling

In a large mixing bowl, combine the fresh strawberries, chopped rhubarb, granulated sugar, cornstarch, lemon juice, and salt. Gently toss the mixture until the fruit is evenly coated. Set aside to let the juices mix for about 15 minutes.

Prepare the Pie Crust

Preheat your oven to 425°F (220°C). Roll out one pie crust and fit it into a 9-inch pie dish. Trim any excess edges.

Fill the Pie

Pour the strawberry-rhubarb mixture into the prepared pie crust, spreading it evenly.

Top the Pie

Roll out the second pie crust and place it over the filling. Seal and crimp the edges. Cut several slits in the top crust to allow steam to escape. Optionally, brush the top with milk and sprinkle with sugar.

Bake

Bake in the preheated oven for 15 minutes. Reduce the temperature to 350°F (175°C) and continue baking for an additional 30-35 minutes, or until the filling is bubbly and the crust is golden brown.

Cool and Serve

Remove the pie from the oven and allow it to cool for at least 2 hours before slicing. Serve warm or at room temperature, ideally with a scoop of vanilla ice cream!
