Method

Prepare the Veggie Patty

    Cook Quinoa

    In a medium pot, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and water is absorbed. Set aside to cool.

    Mash Beans

    In a large bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.

    Combine Ingredients

    Add the cooked quinoa, grated carrot, diced bell pepper, chopped onion, minced garlic, cumin, paprika, salt, black pepper, egg, and breadcrumbs to the mashed beans. Mix thoroughly until all ingredients are well combined.

    Form Patties

    Divide the mixture into four equal portions and shape them into burger patties.

    Cook Patties

    Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side or until golden brown and heated through.

Assemble the Burger

    Toast Buns

    Optional: Toast the burger buns on a skillet or grill until lightly browned.

    Add Cheese

    Place a slice of cheese on each patty during the last minute of cooking to allow it to melt.

    Build the Burger

    On the bottom half of each toasted bun, layer a lettuce leaf, the veggie patty with melted cheese, a slice of tomato, and pickles. Add ketchup and mustard to taste.

    Top with the other half of the bun, serve immediately, and enjoy your delicious veggie burger!
