    Preheat your oven to 400°F (200°C). Wash and peel the russet potatoes. Cut them into small cubes and place them in a large pot.

    Cover the potatoes with water and add a pinch of salt. Bring to a boil over high heat. Once boiling, reduce the heat to medium and cook for 15-20 minutes, or until the potatoes are fork-tender. Drain and set aside.

    In a large mixing bowl, combine the sour cream, cream cheese, and 2 cups of cheddar cheese. Mix until smooth and creamy.
