In a skillet over medium heat, cook the ground beef or chicken until browned and cooked through, about 7-10 minutes. Make sure to break it apart as it cooks. Drain any excess fat.

Heat the queso
In a small saucepan, heat the queso over low heat until melted, stirring occasionally. Remove from heat.
Assemble the nachos

Layer the chips
On a large baking sheet or platter, spread out the corn tortilla chips in an even layer.

Add toppings
Evenly distribute the cooked ground beef or chicken and kidney beans over the chips.

Pour on the queso
Drizzle the melted queso over the chips, meat, and beans.

Finish with fresh toppings
Top with shredded lettuce, diced tomatoes, and sliced jalapeños.

Serve the nachos hot with sour cream and salsa on the side for dipping.
