Rinse the turkey breast under cold water and pat dry with paper towels. Trim any excess fat.

In a small bowl, mix together olive oil, smoked paprika, garlic powder, onion powder, black pepper, and salt to form a marinade.

Rub the marinade all over the turkey breast, ensuring it is evenly coated. Cover and refrigerate for at least 2 hours, or overnight for best flavor.

While the turkey is marinating, soak the applewood chips in water for at least 30 minutes.
