Marinating the Chicken

    In a large mixing bowl, combine olive oil, lemon juice, minced garlic, paprika, salt, black pepper, and dried thyme. Whisk together until well blended.

    Add the chicken breasts to the marinade, ensuring that each piece is fully coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight for best flavor.

Smoking the Chicken

    Soak the hickory wood chips in water for at least 30 minutes before smoking. Preheat your smoker to 225°F (107°C). Place the soaked wood chips in the smoker box.
