Chicken Marinade
Wood Chips for Smoking
Method
Marinating the Chicken
- 1
Prepare the Marinade
In a large mixing bowl, combine olive oil, lemon juice, minced garlic, paprika, salt, black pepper, and dried thyme. Whisk together until well blended.
- 2
Marinate the Chicken
Add the chicken breasts to the marinade, ensuring that each piece is fully coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight for best flavor.
Smoking the Chicken
- 3
Prepare the Smoker
Soak the hickory wood chips in water for at least 30 minutes before smoking. Preheat your smoker to 225°F (107°C). Place the soaked wood chips in the smoker box.
- 4
Smoke the Chicken
Remove the chicken from the marinade and place it directly on the smoker grates. Close the lid and smoke for about 1.5 to 2 hours, or until the internal temperature of the chicken reaches 165°F (74°C).
Serving the Chicken
- 5
Slice and Serve
Once the chicken is fully cooked, remove it from the smoker and let it rest for 10 minutes. Slice the chicken into thin pieces and serve warm with your favorite sides.
