Method
Prepare the Vegetables
- 1
Shred the Cabbage
Remove the outer leaves of the cabbage and cut it into quarters. Shred the cabbage using a sharp knife or a mandoline slicer until you have 4 cups. Place in a large mixing bowl.
- 2
Grate the Carrots
Peel the carrots and grate them using a box grater or food processor until you have 2 cups. Add to the mixing bowl with the cabbage.
- 3
Chop the Red Bell Pepper
Remove the seeds and stem from the red bell pepper, and chop it into small pieces. You should have roughly 1 cup. Add to the mixing bowl.
- 4
Slice the Green Onions
Wash the green onions and slice them thinly, including both the white and green parts. Add to the mixing bowl.
Make the Dressing
- 5
Combine Dressing Ingredients
In a separate bowl, combine the mayonnaise, apple cider vinegar, honey, Dijon mustard, celery salt, black pepper, and salt. Whisk together until smooth and well blended.
Mix the Slaw
- 6
Combine Slaw and Dressing
Pour the dressing over the vegetable mixture in the large bowl. Use a spatula or tongs to toss everything together until the vegetables are evenly coated with the dressing.
- 7
Chill the Slaw
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
