Prepare the Vegetables

    Shred the Cabbage

    Remove the outer leaves of the cabbage and cut it into quarters. Shred the cabbage using a sharp knife or a mandoline slicer until you have 4 cups. Place in a large mixing bowl.

    Grate the Carrots

    Peel the carrots and grate them using a box grater or food processor until you have 2 cups. Add to the mixing bowl with the cabbage.

    Remove the seeds and stem from the red bell pepper, and chop it into small pieces. You should have roughly 1 cup. Add to the mixing bowl.

Make the Dressing
