Catfish Preparation

Soak the Catfish
In a large bowl, pour the buttermilk over the catfish fillets, ensuring they are fully submerged. Cover and refrigerate for at least 30 minutes.

Prepare the Breading
In a separate bowl, combine the flour, cornmeal, cajun seasoning, salt, and black pepper. Mix well.

Bread the Catfish
Remove the catfish from the buttermilk and let any excess drip off. Dredge each fillet in the flour mixture, pressing gently to adhere.

Fry the Catfish
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the breaded catfish fillets and fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.
Remoulade Sauce

Mix the Sauce
In a bowl, combine mayonnaise, Dijon mustard, hot sauce, lemon juice, chopped capers, paprika, garlic powder, salt, and black pepper. Stir until well mixed. Refrigerate until ready to use.

Prepare the Bread
Slice the French bread loaves in half lengthwise.

Assemble the Sandwich
Spread a generous layer of remoulade sauce on both sides of the bread. Place shredded lettuce and sliced tomatoes on the bottom half, followed by the fried catfish fillet. Top with more remoulade sauce if desired, and close the sandwich.
