Preparation

Prepare the Ribs
Remove the membrane from the back of the ribs for better flavor absorption and tenderness.

Create the Dry Rub
In a bowl, mix together brown sugar, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper to create the dry rub.

Apply the Rub
Generously coat the ribs with the dry rub. Ensure all sides are covered. Wrap the ribs in plastic wrap and refrigerate for at least 4 hours, preferably overnight.
Smoking

Prepare the Smoker
Preheat your smoker to 110°C (225°F). Use hickory or applewood chips for a nice smoky flavor.

Smoke the Ribs
Place the ribs in the smoker bone side down. Smoke for about 3 hours, maintaining a steady temperature.

Wrap the Ribs
After 3 hours, remove the ribs and wrap them tightly in aluminum foil. This helps to retain moisture. Pour apple cider vinegar into the foil package before sealing.

Finish Smoking
Return the wrapped ribs to the smoker and continue cooking for another 2 hours.

Return the ribs to the smoker for an additional 30 minutes to set the glaze.
