Marinade Preparation

    Mix the Marinade

    In a large bowl, combine honey, sriracha sauce, minced garlic, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

    Marinate the Chicken

    Add the chicken breasts to the marinade, ensuring they are fully coated. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

Cooking the Chicken

    Preheat the Smoker

    Preheat your smoker to 225°F (107°C).

    Smoke the Chicken

    Remove the chicken from the marinade and place it in the smoker. Smoke the chicken for about 2 to 3 hours, or until the internal temperature reaches 165°F (74°C).

    Shred the Chicken

    Once cooked, remove the chicken from the smoker and let it rest for 10 minutes. Then, using two forks, shred the chicken into bite-sized pieces.

Assembling the Tacos

    Prepare the Tortillas

    Warm the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until they are soft and pliable.

    Place a generous amount of shredded smoked chicken on each tortilla. Top with shredded lettuce, coleslaw mix, and shredded mozzarella cheese.
