Dough Preparation

    Mix Dry Ingredients

    In a large bowl, whisk together the all-purpose flour, granulated sugar, salt, and baking powder until well combined.

    Cut in Butter

    Add the unsalted butter to the flour mixture and use a pastry cutter or your fingers to cut it into the flour until it resembles coarse crumbs.

    Add Wet Ingredients

    Pour in the whole milk and vanilla extract. Stir until the dough comes together. If it's too sticky, add a bit more flour.

    Chill the Dough

    Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Filling Preparation

    Prepare the Filling

    In a medium bowl, combine the fruit filling with cinnamon and sugar if desired. Mix well and set aside.

Frying

    Heat the Oil

    In a large, deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Roll Out the Dough

    On a floured surface, roll out the chilled dough to about 1/8 inch thick. Cut into circles using a biscuit cutter or a glass.

    Place a tablespoon of filling in the center of each dough circle. Fold the dough over to create a half-moon shape, and press the edges to seal. Use a fork to crimp the edges for a decorative touch.

    Fry the Pies

    Carefully place a few pies in the hot oil, being careful not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown. Remove with a slotted spoon and drain on paper towels.
