For the Chicken Fried Steak

    Prepare the Steak

    Using a meat mallet, pound the beef round steaks to about 1/2 inch thickness. Season both sides with salt and black pepper.

    Set Up Breading Station

    In three shallow bowls, place the flour in the first, whisk the eggs and milk together in the second, and keep the remaining flour for later use in the third.

    Bread the Steaks

    Dredge each steak in the first bowl of flour, shaking off the excess. Dip into the egg mixture, letting any excess drip off, then coat thoroughly in the flour in the third bowl.

    Fry the Steaks

    In a large skillet, heat the vegetable oil over medium-high heat. Once oil is hot, carefully add the breaded steaks. Fry for about 4-5 minutes per side, or until golden brown and cooked through. Remove and drain on paper towels.

For the Gravy

    Make the Roux

    Using the leftover oil in the skillet (about 1/4 cup), whisk in 0.5 cups of flour over medium heat. Cook for about 2-3 minutes until golden brown.

    Add Milk

    Gradually whisk in the milk until smooth. Continue to whisk until the gravy thickens, about 5 minutes.

    Season the Gravy

    Add salt and black pepper to taste. Adjust consistency with more milk if needed.
