Catfish Preparation

Prepare the Battering Mixture
In a large bowl, combine the all-purpose flour, cornmeal, baking powder, salt, black pepper, and paprika. Mix well.

Dredge the Catfish
Dip each catfish fillet first into the egg mixture, allowing excess to drip off, and then coat with the batter mixture. Ensure an even coat.

Heat the Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Catfish
Carefully place the battered catfish fillets in the hot oil. Fry for 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
Hush Puppies Preparation

Prepare the Hush Puppy Mixture
In a large bowl, combine cornmeal, all-purpose flour, baking powder, and salt. Stir in the finely chopped onion and mix well.

Add Milk
Slowly add the milk to the dry mixture and stir until a thick batter forms.

Heat Oil for Frying
In a separate deep skillet, heat 2 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry Hush Puppies
Using a spoon, carefully drop small balls of the hush puppy batter into the hot oil. Fry for about 3-4 minutes until they become golden brown. Remove and drain on paper towels.
