Method

Preparation of Meats

    Prepare the Ribs

    Start by removing the membrane from the back of the pork ribs. Rub with your favorite spice mix and let marinate for at least 2 hours.

    Marinate Chicken Thighs

    Season the chicken thighs with salt, pepper, and your choice of marinade. Let them sit for 1 hour, preferably in the fridge.

    Prepare the Brisket

    Trim any excess fat from the brisket, rub with salt and pepper, and let it rest at room temperature for 30 minutes before cooking.

Cooking the Meats

    Cook the Ribs

    Preheat your smoker to 225°F (107°C). Place the ribs in the smoker and cook for approximately 6 hours, or until tender.

    Grill the Chicken Thighs

    Heat the grill to medium-high heat. Grill the chicken thighs for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C).

    Smoke the brisket at 225°F (107°C) for about 10-12 hours, or until it reaches an internal temperature of 195°F (90°C). Wrap in foil and let it rest for at least 30 minutes before slicing.
